There's been quite a lot of chat about the delicious Denman tea loaf on the UWI Facebook group recently. The recipe's buried on MyWI, but luckily for us a photo of the results and the recipe were shared during the conversation. You might like to try it...
A couple of variations offered in the chat:
add a spoonful of marmalade to the mix OR
use as a base for Christmas cakes and add glace cherries, nuts and brandy
A number of commenters appreciated the absence of fats and/or the reduced sugar aspects of the recipe.
For those of you don't know, Denman was the WI college in Oxfordshire until the pandemic hit which has since morphed into the WI Hub online. We had a fab afternoon there as a group in 2019, little did we know that it was our last opportunity to visit. The recipe for Lady Denman shortbread usually served at the first afternoon tea at residential courses was included in our second Lockdown Life magazine here (six turns of the pages in).
