Deb is turning out to be a wonderful key member of the Belles. Not only is she our Treasurer, she has a lovely habit of bringing a stack of Welsh cakes to our main meetings or the sub-groups she attends. As you can see, they disappear pretty quickly!
There are many variations of this classic recipe out there, but what could be better than Deb's own one, kindly provided for us to use whenever we need an interim fix? No baking is required, so they can jump onto your plate in double quick time! The key to this version is the inclusion of mixed spice - not all of them do - and Deb told me grated nutmeg makes a nice alternative. Raisins or currants could be substituted for the mixed fruit if that's what you have to hand in your store cupboard. Other variations e.g. chocolate chips, will transform your results into not-Welshcakes. Oh, the horror!
